There's nothing more comforting than a hearty bowl of soup on a cold winter day. I've been craving a hearty soup packed with flavor and nutrition and I finally perfected my recipe! This delicious plant-centered soup features heart healthy pinto beans, Swiss chard, bone broth, and chicken breast for a rich flavor combo that will warm you up all winter long!

This Hearty Winter Soup is simple but loaded with flavor. If you've read my other recipe posts you know I'm all about minimizing my time in the kitchen. I love working smarter not harder when it comes to meal prep and this Hearty Winter Soup is an easy meal you can have on the table in less than 30 minutes by using an Instant Pot

Pro Tip: The star of this vegetable soup is Swiss chard. This green leafy veggie is a nutritional power-house with earthy-flavors that boost this soup with vitamin C, vitamin A, vitamin K, potassium, magnesium, iron, and fiber!

Instant Pot Hearty Winter Soup

For an added bonus, you can eat the whole Swiss chard including the stalks which reduces your food waste and enhances the dish with a savory flavor. In addition to this meal being plant-based and full of nutrition, it's a heart healthy dish that has no added salt! That's a plus, when you're trying to manage your blood pressure and/or risk for heart disease.

The perfect hearty winter soup packed with nutrient rich veggies & loads of flavor!
Ingredients
  • 3 cups Chicken Bone Broth
  • 1 bunch, chopped Celery
  • 3 large, chopped Carrots
  • 1/2, chopped Yellow Onion
  • 1 bunch, chopped Swiss Chard
  • 3 cloves, minced Garlic
  • 2, small Red Potatoes
  • 1 can, no salt added Pinto Beans
  • 1lb boneless, skinless, cubed Chicken Breast
  • 2 cups Water
  • 1/2 tsp., ground Black Pepper
  • 1/2 tsp. Italian Seasoning
  • 1/2 lemon Lemon juice
  • 1 Tbsp. Butter
Instructions
Rinse, dry, and chop celery, carrots, onion, Swiss chard, garlic, red potatoesTurn on your Instant Pot and set to SauteAdd butter and saute celery, carrots, and onion until caramelizedAdd in chicken, bone broth, water, and potatoesSet Instant Pot to Soup for 10 minutes and cover with lid and close ventOnce the time is up, release pressure vent and add in Swiss chard and pinto beans. Cook for another 5 minutes with lid off, stir frequentlyEnjoy!
