Happy New Year! I hope you all enjoyed the holidays and are ready for a fresh start without stress or guilt around food! If there's one thing I wish for you in the new year, it's to focus on what helps you feel your best and block out any messages that tell you you're not good enough. There are hundreds of diet and weight loss messages surrounding us this time of year that tell you to change your body size or participate in restrictive eating habits and excessive exercising to keep up with unrealistic societal and/or beauty standards. Instead of going on another detox, diet, or cleanse, ask yourself the last time you participated in joyful movement, self-care, and nourished your body with foods you enjoy. You'll feel energized, happy, and less stressed focusing on what works for you instead of against you in managing your health!

This recipe is delicious and nutritious! What you can't tell from the picture is that it's packed with nutrient rich ingredients and is full of satisfying flavor.

Pro Tip: This breakfast skillet is already a balanced meal since it has a source of fiber, carbohydrate, protein, fat, and vitamins and minerals! If you feel like this meal needs a little extra something, pair it with a bowl of berries, yogurt, or a delicious piece of sourdough bread!

Wholesome Breakfast Skillet
A savory breakfast that's delicious and nutritious!
Ingredients
  • 2 Sausage Links
  • 1 Large Red Potato
  • 1 Large Red Bell Pepper
  • 1 Large Sweet Onion
  • 4 oz., Sliced White Mushrooms
  • 3 cups Spinach
  • 1/3 cup Shredded Cheddar Cheese
  • 6 Eggs
  • 2 Tbsp. Butter
  • 1/4 cup Fresh, Diced Thyme
  • Salt & Pepper to taste
Instructions
Chop the potato, onion, bell pepper, sausage, and spinach and set aside. Preheat oven to 350 degrees FHeat your cast iron skillet on the stove, cook the sausage and render the fatTake sausage out of the skillet and place in a bowl on the sideAdd butter and potatoes to the skillet and cook until brown Remove the cooked potatoes from the skillet and set aside in bowl with sausageAdd onion and bell pepper to skillet and cook for 2-3 minutes until tenderAdd in mushrooms and spinach and cook until wiltedOnce all vegetables are cooked add the sausage and potatoes back to the skillet and cook for 1-2 minutes. Add in thyme, salt and pepper to tasteUse a spoon or spatula to make wells into the skillet and crack eggs into each hole Top skillet with cheddar cheese, place skillet into the oven and bake for 7-10 minutesCarefully take skillet out of oven and serve immediately
